Hearty, delicious and comforting - this is one that the whole family will love. It’s perfect for a mid-week dinner with homemade garlic bread, but also works a treat on the weekend with a side salad and roast veggies. I swapped the white pasta for wholegrain pasta for a super simple nutrition and flavour boost. Topped with mozzarella and Parmesan cheese it’s comfort food at its best. This recipe serves 4 people. First things first champ, heat the oven to 180 C / 356 F
Add a knob of butter or olive oil to a pan and heat to a medium heat.
Add the onion once the butter has melted, and cook for around 3-4 minutes.
Next add the garlic, and stir for a min before adding the minced beef.
Leave to cook, stirring now and then, for 5 – 10 minutes until cooked through.
Next add the tomato purée, stir thoroughly and then add the chopped tomatoes, and give it a good stir.
Bring the sauce to the boil. Then reduce the heat to medium and season with salt.
While the sauce is cooking, cook the pasta until it’s al dente, deduct 2 minutes from the recommended cooking time on the packet.
Drain the pasta and add it into the pot with the sauce. Stir through the parmesan and the chopped basil and season.
Pour the pasta mixture into an oven proof dish, top with mozzarella strips and cook in the oven for 20 minutes.
Top with freshly grated parmesan and serve with your favourite side.
