The Ultimate Veg Soup

It’s that time of year... soup season 🍜 . The ultimate veg soup, delicious and hearty and super tasty with homemade bread to dunk.

 1 Onion, chopped
 3 Cloves of garlic chopped
 2 Knobs of butter
 1 Leek, thinly chopped
 1 Celery Stick, chopped
 2-3 Carrots, peeled and chopped
 6-8 Baby potatoes
 1 Veg stock cube
 1000 ml water
 1 tsp mixed herbs
 ½ tsp paprika
 2 tbsp creme fraiche (or cream)
 Salt and pepper

In a large pot, melt butter and sweat the onions and garlic for 2-3 minutes.

Add leeks and remaining veg and sweat for a further 5 minutes.

Add the herbs and paprika. Give it a good stir and cover the vegetables with stock (approx. 1000ml)

Bring to the boil and simmer for 20 minutes or until vegetables become tender.

Blend the vegetable to a smooth consistency using a hand blender.

TIP: If you are using a blender, allow to cool before blending.

Add cream or crème Fraiche, and season to taste.
