Traditional Potato and Pea Mint Soup

Traditional Potato & Pea Mint Soup ☘️ perfect for spring and St Patrick’s Day.

 2 tbsp olive oil
 2 onions
 2 cloves of garlic
 600 g potatoes, peeled
 1 l veg stock
 10 ½ cups frozen peas
 Small bunch of mint, chopped
 Juice of 1/2 a lime
 Salt and pepper, to taste

Fry the onions until soft, about 5 minutes.

Add the garlic, and cook for the final 2 minutes while the onions are cooking.

Add the potatoes to the pot.

Add 1 litre of veg stock, cover and boil for 15 mins

Add the frozen peas for the last two mins.

Toss in the mint and squeeze in the lime juice.

Blend the soup using a hand blender, leaving it slightly chunky.

Season with sea salt and black pepper, to taste.

Divide the soup between the bowls and have with some traditional Irish soda bread. ☘️
