Banana Oat Bread

This banana bread is a great pre or post-training snack with a glass of bainne πŸ₯› 🍌 Makes 10-12 slices depending on how thick you cut them. Replenish the best way possible after training with #ReelFuel.

 300 g oats (150g Oats + 150g oat flour)
 2 free-range eggs
 3 ripe bananas
 4 tbsp Greek yoghurt
 2 tbsp butter
 2 tsp cinnamon
 3 tbsp maple syrup or honey
 1 tsp baking soda
 Pinch of sea salt
 2 handfuls of walnut pieces

Preheat the oven to 170C / 338F.

Add all the ingredients except the oats and oat flour to a blender and blitz.

Add the oats and oat flour to a mixing bowl and then pour the wet ingredients over the oats.

Pour mixture into a greased up bread tin and whack in the oven for 45-50 mins at 170C.

Remove from oven and let cool before leaving to set in the fridge.
